Why Gluten Free?
Why Dairy Free?
It all started several years ago. I discovered that I had developed an allergy to Gluten and Dairy. It took me many years to determine the root of my problems. I spent hours researching on the internet, speaking to doctors, taking tests, following diets. In the end, the verdict came; Avoid Gluten. Avoid Lactose.
Whenever I strayed from that mandate, I paid the price.
I developed a fear of eating out, not trusting that the typical restaurant would understand my dilemma. Sure, some restaurants tried to cater to those of us on the proverbial Gluten Free bus. But, in truth, most do not understand what Gluten is, or that one may not be able to digest it. When I would question menu items asking the waiter or waitress whether or not the french fries contained, gluten, I would get a puzzled look.
The truth is that many seemingly gluten free products do contain gluten. Take for example, french fries. They are simply potatoes deep fried. But, in reality, many french fry manufacturers coat their french fries with wheat flour. Why? I'm not sure why food manufacturers have determined that seemly every product should contain wheat as an additive. But, it drives me nuts.
Double Whammy:
Then, if I am successful in finding something that is gluten free, that is only half the battle. I still need to verify that it is dairy free. My husband rolls his eyes as I reenact the scene from "Harry Met Sally" with the waiter, or, pay the price.
Well my friend, if this describes you, then despair no more. I am here to help. Whether you are like me and have celiac or an intollerance to Gluten or Dairy or both, or if you simply have determined, as many have, that a gluten free diet is a healthy alternative to the overdose of gluten being administered by food manufacturers, then order my delicious, fresh baked goods, and rest assured that everything I sell is entirely Gluten Free and Dairy Free.
Trust me. I am the Guinea Pig. I have tasted, sampled, eaten and adjusted, every recipe that results in the products you see here. But, that is not all. You see, I am determined not to have to deprive myself of the guilty pleasures of those who pay no attention to Gluten or Dairy I want to eat the same desserts and sweet treats. So, my products must pass muster with my second line of Guinea Pigs, my husband and three children. They are much tougher critics. They can eat what they please. But, they choose to eat my baked goods. Why? Because my products are so good that you will not even know you are eating gluten free or dairy free.
Just try it. I dare you. In fact, make sure you hide your cookies, or they will disappear. That is the true test. Please know that my products are made in a kitchen that also uses Gluten BUT rest assured that due to my own sensitivity, I make sure there is no cross contamination. I also bake with tree nuts and peanuts so if you are allergic to those items, my bakery is not for you.
